My aunt and I disagree about when the soup is done
She brings her own ladle and an extra hour of patience, and both of us know she is right.
My aunt arrives at half past nine on a Sunday with her own ladle. This is not a joke. She does not trust mine, which she says is too shallow and lifts more air than broth, and she may be right, but a woman who brings her own ladle to your kitchen has already decided how the morning is going to go.
We are making the pork and lotus root soup her mother made, which means we are making two slightly different soups in the same pot and pretending it is one. The root is sliced and waiting. The ribs have been blanched, the grey scum poured off, the pot rinsed and refilled with clean water, because that first dirty boil is the one thing we agree on completely and in silence.
Then we stop agreeing.
The argument is about time. I was taught, somewhere, by someone, that the soup is ready when the lotus root has gone soft enough to take the edge of a spoon. My aunt was taught that the soup is ready when the root has gone past soft, back through to a kind of chalky firmness that only arrives if you leave it long after you were sure it was done. Two hours, she says, is for people who are hungry. Three hours is for people who want soup.
So we wait. She sits at the small table with her tea and tells me about a neighbour from forty years ago whose soup you could smell from the bus stop, which is either a compliment to the neighbour or a complaint about the street, I have never been able to tell. The windows go white with steam. The kitchen fills with that heavy sweet smell, pork fat and something mineral from the root, that I will spend the rest of my life trying and failing to put into a recipe in grams.
At the two hour mark I lift the lid. The root takes the spoon easily. This, to me, is the soup. I say so. My aunt does not even turn around. Put the lid back, she says. You are letting the clever part out.
I put the lid back.
Here is the thing I will not admit to her face. She is right, and not because of the root. The extra hour is barely cooking at all. The ribs are long done, the root is long soft, and nothing much happens to the food in that last stretch that a scientist could measure. What happens is to the morning. The waiting is the dish. The soup you eat at three hours tastes of the hour you did not need to wait but waited anyway, together, at a small table, arguing about a neighbour nobody else remembers.
When we finally eat it she takes her first spoonful before me, with her own ladle, and says nothing, which from my aunt is the highest grade of praise there is. I have written the recipe down. It says three hours. It does not say why, because the why will not go into grams, and anyway she would not want a stranger to have it for free. Some things you are meant to learn by standing in the steam and being told to put the lid back.
Family disagreements about food sit at the warm centre of Bring Back the Yellow Bowl, where everyone gets a say in what a market kitchen carries forward.
